Heathcote Selection Shiraz

2004

Grapes were sourced from a single vineyard in Colbinabbin in the northern Heathcote region. The wine is a rich dark crimson in colour and exhibits sweet plum and mulberry fruit aromas with hints of liquorice and spice. Full bodied and dry, it is supported by generous fine-grained tannins. Drink now or hold out until 2012.

Harvest
Harvesting was completed in the middle of March. It was hand picked in a single parcel.

Winemaking
The grapes were fermented in open tank fermenters, after which, they were pressed in a basket press. This process provides for a gentle extraction of colour and soft tannins. The wine was then left to age in a mixture of old French and American oak barriques for 12 months, during which time it underwent malolactic fermentation. The wine was racked prior to bottling. Minimal filtration was used.
