McIvor Estate Cabernet Merlot

2004

A classic bordeaux blend, this wine shows classic cool climate characteristics. It is a deep plum red colour with aromas of violets, blueberries and black cherries. Plum spice and and liquorice create a full-bodied and well balanced with firm tannins and long finish. Drink now, or hold out until 2014.

Cabernet Sauvignon 55%, Merlot 45%.

Soil
Granitic loams, deep and free draining.

Harvest
Completed late in May; the cabernet and merlot were hand picked together in a single parcel.

Winemaking
The wine was made using traditional techniques with the grapes being fermented in open tank fermenters, after which, they were pressed in a basket press. This process provides for a gentle extraction of colour and soft tannins. The wine was then left to age in a mixture of French oak barriques for 12 months, during which time it underwent malolactic fermentation. The wine was racked prior to bottling. Minimal filtration was used.
