The wines produced at McIvor Estate reflect the soil and the climate of its location. At the southern end of the Heathcote wine region, vintage is much later than the rest of the region. This produces wines with intense elegant flavours that develop very well with bottle age. The granitic soils of the vineyard contribute to the high aromatic qualities. The grapes are hand picked and the red wines are then processed with traditional methods of open fermentation and barrel aging in oak barriques for 12 months prior to bottling.
The terroir of the region results in wines of elegance and finesse that reward short to medium term cellaring. |
